Pâte Brisée (enriched Shortcrust Pastry): Parmesan, Bacon and Onion Tartlet Rough Puff Pastry: Chicken and Wild Mushroom Pithivier, Madeira Sauce Pâte Sablée: Tarte au Citron (classic Lemon Tart), Crème Fraiche and Lemon Syrup Bakers at the ready! By the end of our Pastry course, you will have created three different types of pastry from scratch, including a beautifully risen rough puff pastry encasing a delicious chicken and wild mushroom filling, a savoury shortcrust tart packed with flavour and the perfect sweet sable pastry for an all-time classic, tarte au citron. Our full day classes provide six hours of learning and development, as you prepare two dishes and enjoy an interactive demonstration of the third before sitting down to enjoy them with a glass of wine.
