Andrew Hills Food Philosophy
“Keep it seasonal! We have so many great British products so I try to use sustainable food sources with as much local and seasonal influence’s as possible. Growing up on a farm gave me an intimate understanding of the link between careful, caring production and delicious end results. I am always trying to get the best from my ingredients even within seasons the taste and textures can vary from week to week. It drives my team crazy sometimes as we often have to adapt dishes from day to day to get the best balance of taste and textures on the plate. I believe there is no such thing as the perfect dish, there is always room for improvement.”
