Sir Richard Branson’s Pastry Chef comes to Raithwaite Estate, Whitby

Raithwaite Estate has hired Heidi Stevens, former Pastry Chef on Richard Branson’s private resort, Necker Island.

Heidi began her career in pastry after training at the prestigious Le Corden Bleu in London which is considered to be the world’s premier culinary arts institute. Here she gained her Superior Diploma of Patisserie in 2003.

Following that, Heidi worked in international and London based establishments, until she found herself under instruction of Gordon Ramsay at Claridges. Soon promoted from Demi Pastry Chef to Chef de Partie, Heidi gained the responsibilities of running the entire section; a 24 hour job in a fast paced environment.

After the hectic environment of London, warmer climates called and Heidi found herself in the Seychelles, working at The Banyan Tree resort. Planning was of upmost importance, where fresh produce and dry goods had to be shipped in, requiring extreme time stock and time management.

Heidi, having gained more management skills in the Seychelles went on to work in the luxurious British Virgin isles resort of Little Dix Bay at management level. Her penultimate career break came when she landed a role at Richard Branson’s Necker island as his first ever Pastry Chef. The amazing opportunity enabled Heidi to create the afternoon tea menu and present to customers paying up to $64,000 a night, some of whom included A-list Hollywood stars.

Heidi now begins a career at Raithwaite Estate and has launched an exciting afternoon tea menu which will be gracefully accompanied by sounds from their baby grand piano. Heidi will also pioneer Raithwaite’s extensive ice cream menu which explores a total of 101 different flavours!

Martin Pick, Head Chef at Raithwaite Estate, is delighted: ‘to have a Pastry Chef with half of the experience of Heidi is a blessing but to have someone here of Heidi’s calibre is unbelievable. We employ and coach a lot of Pastry Chef apprentices from the local college in Scarborough, so for them it is an even bigger dream. They are inspired by Heidi on a daily basis and we really look forward to spending more time being very creative. We aim to be the most innovative and well known hotel in Yorkshire for afternoon tea.’
