The Black Swan Announces
New Head Chef ~ Patrick Bardoulet

The Black Swan, Helmsley announce the appointment of new Head Chef, Patrick Bardoulet.

Patrick spent the early years of his profession in his native France, gaining a classical Chef’s training in high-calibre establishments before moving further afield and gaining extensive experience in a range of five star, Michelin-starred and gastronomy restaurants in the UK as well as a variety of other countries, including Denmark, Ireland, Cyprus and Dubai.

For 8 years of his recent career, he has gained and maintained a consistent and exceptional level of 3AA rosette status, across a variety of establishments, and for the last 12 months has worked in the Middle East as Executive Head Chef for private clients.
Numerous awards have been achieved by Patrick, and include ‘AA Restaurant of the Year’ (2007-2008), ‘Rural Chef of the Year’ (2009), ‘Eat Scotland Gold Award’ (2009 and 2012) and ‘AA Hotel of the Year for Scotland (2013/14)’, which demonstrate his culinary talent and dedication to his profession.

He loves Britain and especially having a wide variety of fresh, local, seasonal ingredients at his disposal. Naturally he shall be fulfilled by the abundance of produce from field, farm and sea that we enjoy here in Yorkshire.
His passion, expertise and attention to detail will delight diners at The Gallery Restaurant. Well known for its fine dining excellence, the hotel restaurant was presented with three AA rosettes earlier this year.

Paul O’ Hanlon, Hotel General Manager, commented on Patrick’s appointment:
We aim to showcase Yorkshire’s finest quality of seasonal produce to an optimum level throughout the hotel, for weddings and other private functions, fine dining and also in the tearoom. Patrick’s passion, experience and cosmopolitan flair, will bring exciting flavour combinations to our Modern British menus. Our aim is to deliver excellent dining of the best calibre, yet with a realistic bill at the end of the night.’

‘The Gallery’ restaurant has a dual function, diners, residents and non-residents alike, can enjoy the ambience of the stylish modern décor, with one of the finest collections of original works of art in the area.

The iconic hotel stands proudly at the head of Helmsley’s market place and has enjoyed its reputation as a place of fine hospitality for well over 500 years now ~ a trend which is set to continue.
